  1. Preheat your oven to 285 degrees F. Line your cookie sheet with parchment paper.
  2. Whip your egg whites till stiff peaks form. Sift your powdered sugar and gradually stir it into the egg whites. Reserve 1/3 cup of the egg whites for frosting them.
  3. Mix the chopped nuts, vanilla sugar, and cinnamon. Add 150 grams of the nuts to the egg whites and mix. Add the remaining nuts and knead into a dough. If you dough remains too sticky see note below for zimtberge.
  4. Sprinkle some powdered sugar onto your table or roll it out onto parchment about 1 cm or slightly less than half and inch thick. Use a star shaped cookie cutter to cut out your stars. Use a butter knife to spread the reserved egg white on top of your cookies.
  5. Place on baking sheet. Bake them on the middle rack for 15 minutes. They should still feel soft in the middle when you take them out of the oven. If they are too soft bake an additional 5 minutes.
Recipe Notes

To make zimtberge which is a great alternative if your dough is too soft due to humidity and other factors simply drop heaping tablespoons of dough onto the parchment instead of rolling it out.  Spread the reserved egg white mixture on top of the peaks.  Proceed to bake them for 15-20 minutes.  They should still feel somewhat soft when you take them out of the oven.
