Are you looking for a roast chicken recipe where the chicken will come out succulent and juicy with tons of flavor?  Mediterranean chicken recipes are healthier than fried chicken and offer more flavor.  Za’atar garlic lemon Mediterranean chicken might just become one your favorite chicken recipes.  This recipe is a leap above plain lemon chicken with an exotic middle eastern spice called Za’atar.  It’s so popular in the middle east that the wild thyme used to make the spice was in danger of extinction, before Israel declared it a protected species.  It’s a good thing they did.  As a result of being protected it is still available to enjoy today.  I would hate to miss out on the dimension of flavor it gives this dish.  While the flavor is mild and non-spicy it is unique in its taste.  It’s mild and herby flavor makes it a great dipping sauce for bread.  While you can make your own Za’atar you may not find it to be worth the effort.  With ingredients like wild thyme and sumac, you may be hard pressed to find some of the ingredients.  Za’atar can be found at the World Market store or on Amazon.

This recipe is great on the grill.  See the recipe notes below for instructions.  You can also replace the thigh with chicken breast and cook it for a shorter amount of time.

To make this dish mix the spices, lemon, oil, and garlic in a bowl.  Pour that on top your chicken, marinade and roast (or grill).  Then get ready to dig in!

  1. Mix the lemon, garlic, oil, and Za'atar.
  2. Pour it over the chicken and allow it to marinade at least 20 minutes. Overnight is better.
  3. Heat your oven to 475 degrees F. Place chicken in the preheated oven and roast for 20 minutes. Turn the heat down to 400 degrees F and roast an additional 40 minutes, or until a meat thermometer reads 200 degrees F in the thickest part of the meat.
Recipe Notes

This recipe can also be grilled.  Preheat your grill to medium high.  Place the chicken on the grill and cook on each side until well done, about 15 minutes per side or till meat thermometer reaches at least 185 degrees F.  Chicken breast may only require 12 minutes of grill time.
