I found this FANTASTIC recipe in the “Scandinavian Holiday Recipes” flip cookbook.  The cookbook claims it is THE kringle recipe from the O&H Danish bakery in Racine, Wisconsin.  At first I thought that this kringle recipe might be too labor intensive, but it is more time than labor that is required for this kringle recipe.  This recipe is FAMOUS in Wisconsin.  This kringle is soo flavorful and absolutely melts on your tongue.  You have to make this recipe (and save yourself a bundle of dough, no pun intended, to boot).  This kringle recipe is soo good it sells for over $20 a piece. This stollen recipe is an authentic German recipe passed down from my grandmother.  It is called quarkstollen in Germany.  It’s moist and very shelf stable (it does not dry out like a yeast stollen at all).  This recipe features quark, a German farmers cheese.  You can make quark or use substitutes such as cream cheese, ricotta, mascarpone, or crème fraiche.  You can also blend cream cheese and ricotta.  Another benefit of this recipe is that it is fast to make since you use baking powder instead of yeast.  My family always preferred this version for it’s moistness and simplicity to make, a plus when it gets eaten up too quickly like it does in our house!
