No to mention the crunch of sweet corn and freshness of adding fresh peppers. It’s best with fire roasted sweet corn if you can find it. I found it by the frozen vegetables. You can use spicy salsa if you want a spicier dish. And it’s delicious with either skinless and boneless chicken thigh meat or breast. This recipe is easy to make for a potluck party or to feed a large family in a short amount of time. Not to mention it also freezes well.
To make this dish you will need salsa, cheddar, rice, broth, chicken, onions, sweet corn, and optional peppers. Start by browning your onions and chicken.
Add the salsa, broth or water and bouillon, rice, corn, and peppers. Cook according to the time specified on your rice package. I would recommended rice that cooks in no less than 10 minutes so your chicken cooks and no longer than 20 minutes so that your vegetables will still be firm. You can also use a pressure cooker. I cooked my rice for 8 minutes in the pressure cooker for a 20 minute rice. If you have a thick piece of bone-in chicken, pressure cook the chicken with broth first for about a additional 10 minutes so that it will be cooked the same time the rice is finished.
