This steak quesadilla recipe features buttery steak, mouth watering melted cheese and caramelized onions.  Add optional peppers and top it off with sour cream and it’s like an authentic Mexican restaurant dish.  Soft pieces of tender meat that are never chewy or tough is what I go for in a steak quesadilla.  Forget ground meat tacos this steak quesadilla recipe takes Mexican food to a whole new level.  Authentic flavors of smoked chipotle and an authentic mix of spices take your taco night to the next level.  Using fresh tortilla shells will greatly enhance the flavor.  You don’t have to make your own tortilla to get great tasting tortillas.  Look for them in the refrigerated section in Walmart.  Your taste buds will thank you.

Let’s get cooking.  To make this steak quesadilla recipe you will need fresh flour tortillas.  Also, preferably grate your own cheddar it will melt better and have a better texture, not to mention taste.  Preshredded cheese tends to have cellulose which alters the moistness.  I also find that it does not melt as good.  You will also need flank, skirt, or flat iron steak.  All of these cuts of meat produce very good tender results for this dish.  You will also need onions and optional peppers in any color.  To give it a really authentic flavor you will need a can of chipotle’s in adobo.  You can find this in the Hispanic section in most supermarkets and Walmart.  It’s a mildly hot pepper that is smoked and then mixed with a wonderful adobo sauce.  Dry spices you will need include chili, cumin, onion powder, garlic salt, black pepper, and optional cayenne.  After cooking your meat you will cook the onions.  After browning the onions 5 minutes you will add some of the meat’s cooking liquid.

Then you will shred the meat and mix it with the onions.

Fry your tortillas and add the cheese and meat mixture then get ready to enjoy the best steak quesadilla’s you ever had!

Instructions
  1. Brown your meat in a pressure cooker. If using a slow cooker see recipe notes below. Add 2 cups of water and your spices. Cover and cook for 40 minutes on medium heat in the pressure cooker. When finished shred with fork.
  2. Slice your onions into rings, and if you are using peppers slice them into thin strips, and fry them in oil on medium for five minutes. Add enough of the cooking liquid from the meat to cover your onions. Partially cover and cook the onions till soft and the liquid is evaporated about 6 minutes. Add to the meat.
  3. Coat a nonstick frying pan in oil or butter and lightly brown your tortilla on both sides for about 30 seconds on medium. Take off heat sprinkle approx. 1/4 cup of cheese on the tortilla. Add 1/6 of the meat. Return the pan to the stove and fold the tortilla twice. Cook on medium low pressing the tortilla with a spatula for about 10 seconds per side. Keep warm in the oven. Repeat with remaining tortillas.
Recipe Notes

If using a slow cooker place your steak at the bottom cover with the spices, onions, and optional peppers.  Do not add water for the slow cook method.  Turn the heat on low and cook for 8 hours.
