You have to try this lahmacun recipe.  It is a type of Middle Eastern Turkish flatbread pizza dough.  So easy to make and soo craveable.  Try something different your tastebuds will not regret it.  You will probably want to make twice the amount of dough and freeze it.  You can freeze this dough after the first rise instead of putting it in the fridge for longer term storage.  Flatbread and pizza dough’s are similar although some flatbread recipes use a leavened dough without yeast. Personally I feel nothing can replace the flavor, texture, and aroma of yeast risen breads.  Therefore, this recipe features a yeast dough.  Feel free to use this as pizza dough when a pizza cravings arises.  The main difference is that flatbreads tend to be thinner have have lighter toppings than pizza.

Lahmacun, as it is known in Turkey tends to be popular throughout the middle east.  They are a great accompaniment to meals or can stand on their own depending on the toppings.  Meat or just spice mixtures tend to be popular throughout the middle east and Mediterranean.  The three toppings displayed here are Berbere and manchego, ground meat with Baharat, and Za’atar.  You can search for them in the search bar or you can follow this link for the ground meat topping.  Click here if you’re interested the in the other toppings.  Making it couldn’t be simplier.

Method For The Lahmacun Recipe

Mix the yeast, sugar, and warm water.  Let stand till foamy.

Next, add the remaining dough ingredients to a large bowl. Stir in the yeast mixture and knead until a soft, smooth ball forms. Add more water if the dough is too dry.  Add more flour, if necessary to keep the lahmacun dough from sticking.  Your dough should be somewhat elastic when you pull on a piece it should look like this.

It should stretch and not break too easy.  If it does not stretch knead it longer.  Then let the dough rise one hour or till doubled.  Punch dough down and let rest for 45 minutes, or refrigerate until needed.  If refrigerated allow the dough to warm to room temperature.  It will make it easier to roll out.  I have to admit I don’t always wait 45 minutes for the rest stage and have had great success waiting only 15 minutes.  Now your flatbread or pizza dough is ready to bake.

Preheat your oven to 500 degrees F.  Roll dough out and top with desired toppings.

Bake 6-10 minutes.

  1. Combine yeast, sugar and 3/4 cup warm water in a bowl, let sit until foamy, about 5-7 minutes.
  2. Combine flour and salt separately, fold in the yeast mixture, and knead until a soft, smooth dough ball forms. Add more water or flour if necessary till you have a soft but not too sticky dough. If kneading by hand you will have to knead it for at least 15 minutes. If you have a stand mixer with a dough hook then 10 minutes. It should be a little elastic when you pull a piece of dough. Cover the dough in the bowl with plastic wrap or oil and cover the bowl with a towel and let it rise for about an hour or till double.
  3. Punch down dough, divide into 4 portions, and form them into a ball. Transfer dough balls to a floured baking sheet. Cover with a damp tea towel and let rest for another 45 minutes, or refrigerate covered in plastic rap until needed.
  4. Preheat oven to 500°, use a pizza stone or metal sheet in bottom third of oven. If you do not have either you can bake the flatbread on parchment, directly on the oven rack.
  5. Roll out each dough ball fairly thin, into a 10” disk. Transfer dough to a parchment paper, spoon about 4 tablespoons of your topping of choice onto dough, spread evenly with your fingers.
  6. Bake until the crust is golden brown and topping is cooked, between 6-10 minutes, depending on the thickness of your crust and the topping layer. Repeat with remaining dough and toppings.
Recipe Notes

This can also be grilled at 450 degrees F with the lid closed.  Second rack indirect heat only.
