This German cucumber salad is refreshing on a hot summer day.  With just four ingredients you may not have to make a shopping trip. Crisp and cooling is what hot weather calls for.  The sour cream makes it creamy and the lemon adds a nice tartness that every salad needs.  You can make this a day ahead since it gets better overnight.  You will however need a mandolin.  No not a musical instrument but a vegetable slicer as pictured below.  It’s also a must have for beet salad.  If will give you a very thin and even cut.After slicing the cucumber you will add lemon and sour cream.  You can make it lighter by using low fat sour cream.  If your lemon is very dry squeeze in the another half of a lemon.  Then add the seasonings.  You will want to taste it and make sure the salt and pepper is to your liking.  Than marinade it in the fridge.

  1. Use a mandolin slicer to slice the cucumbers thin.
  2. Add the other ingredients and mix well. Adjust according to taste.
  3. Allow to marinate in the fridge for at least 15 minutes.
