Easy beef soup recipe with leeks carrots and optional homemade dumplings. Making melt in your mouth homemade beef soup couldn’t be easier or more tender.  Chilly days inspire me to make soup and this beef soup is definitely comforting and warming.  This easy German beef soup recipe couldn’t be simpler but offers melt in your mouth beef and is made with minimal ingredients.  I am certain you will make this beef soup recipe time and time again.  Just put an inexpensive cut of beef like chuck, bottom round, even sirloin in a pot with leeks and cut carrots.  Then add broth and viola homemade beef soup! 

This one is one of my favorites since it is my grandmother’s recipe.  It is simple to make and inexpensive.  The best way to cook this is with a pressure cooker for the fastest results, but you can also simmer it slowly.  Resulting in the best melt in your mouth beef soup you ever tried.  Slow cooking at a lower temperature will result in a clearer broth.  You can also add egg noodles instead of dumplings but in my option nothing is better than homemade dumplings.  You can use the search bar to find the dumpling recipe displayed in the photo or click here.  Homemade dumplings are the perfect accompaniment for this soup.  This recipe freezes well which is especially helpful for the weekend cook who likes to make a weeks worth of food in advance.

To make the soup you put leeks, a carrot, and one pound of beef in a pot or preferably pressure cooker.  It will cook much faster in a pressure cooker.  Sometimes I add the carrots a little later if I don’t plan on straining the soup, and wish to eat the carrots.  That way they don’t get too soft.  You can add the carrots 20 minutes before it’s finished cooking.

You can brown you meat a little first if you like.

Fill it about halfway with broth or water and beef bouillon.

Cook till tender.  Add some egg noodles, or I would recommend the homemade dumplings in my link.  Then top it off with chives.  Fresh chives are best.

Instructions
  1. Cut roast in half. Place in cooking pot.
  2. Chop carrots into one inch disks and roughly chop leeks into one inch disks. Place in cooking pot.
  3. Cover with about eight cups of broth or water and beef bouillon. Make sure it covers the meat. Add more as needed.
  4. Pressure cook according to your pressure cookers directions for 50 minutes. If you do not want to use a pressure cooker, cook the broth on medium low for at least one and a half hours or until the meat if fork tender.
  5. When you are done adjust the broth with more water if too salty or if you need more liquid. If it needs more flavor add some beef flavor bouillon.
  6. If you want a clearer broth you can remove the meat and strain the soup. Then add the meat back into the broth.
  7. Optional, sprinkle with chives.
Recipe Notes

You can adjust the water level and seasoning at the end with bouillon which comes as a dehydrated meat stock cube or powder.
