To make this Baharat recipe you will obviously need Baharat. It a middle eastern spice you can find in specialty stores or on Amazon. Different brands may have slight variations of spiciness. You may want to make sure you are not adding too much if your brand is very spicy. Also check the salt content if there is salt you may not need to add additional salt.
Mix baharat with oil, garlic, tomato paste, and salt. Then caramelize your chopped onions. Your onions should look like this. You need them fairly dark to get a good caramelize flavor. Once they turn black though they will taste burned so watch them carefully.
Add your meat and brown that as well. Break up any large chunks with a wooden cooking spoon. If you use a very lean ground beef you will have to add more oil while browning the meat.
After browning the meat for a few minutes you will add your spice paste and chopped tomatoes. Cook that further on the stove, or if you are making flatbread spoon your meat mixture on top and spread evenly. The meat mixture will cook further in the oven on the flatbread.
