Tabil a Tunisian spice mix for beef or veal was brought to Tunisia in 1492. Tabil is pronounced “table” and means seasoning in Tunisian.  The term can also refer to coriander.  It is believed that tabil was brought to Tunisia by Muslim-Andalusi.

There is no need to purchase premade since tabil is easy to make.  You will just need garlic, coriander, caraway, and cayenne.  If you want to use fresh garlic you will have to mince it and allow it to air dry for two days before mixing in with the rest of the spices.  Otherwise the garlic will spoil.  Caraway seeds are usually found whole and therefore will need to be ground.  Simply grind theses spices together with a mortar and pestle or coffee grinder.  Read more
